Recipe: Cashew Coconut Tahini Treats

Looking for a healthy snack that’s packed with protein? These cashew coconut balls are raw, vegan and gluten free, and they make a great healthy snack that will give you a boost of energy.

INGREDIENTS
1 cup raw cashews
1/2 cup raw walnuts
1 cup tahini
1 cup medjool dates, pits removed, softened in water for 15 min.
1 cup unsweetened shredded coconut
2 tsp. salt

DIRECTIONS
Place nuts in food processor and pulse briefly. Add tahini and pulse again. Remove dates from water, cut up into pieces and add to food processor. Pulse together briefly. Then add coconut and salt and continue processing until well-blended. Remove ingredients, scooping out into a bowl. Use a spoon to help shape into balls. Can roll them in the shredded coconut or ground cashews or leave as is.

Makes about 25.
